A hearty beef goulash made easy in the slow cooker and served with fettuccine.

2 tbsp extra virgin olive oil
1 brown onion, chopped
1.5kg beef chuck steak, trimmed, cut into 3cm pieces
2 tbsp Mutti Double Concentrate Tomato Paste
2 1/2 tbsp sweet paprika
1/3 cup Massel beef stock
2 red capsicums, cut into 2cm pieces
400g can diced tomatoes
500g cup mushrooms, sliced
Fettuccine, cooked
Fresh parsley, chopped, to serve

Heat 1 tbs oil in a large frying pan over medium heat. Add onion (1 brown onion, chopped). Cook, stirring, for 5 minutes or until softened. Transfer to slow cooker.
Heat remaining 1 tbs oil in pan over medium-high heat. Cook beef (1.5kg beef chuck steak, trimmed, cut into 3cm pieces), in batches, for 3 to 4 minutes or until browned.
Return beef to pan. Add tomato paste (2 tbsp Mutti Double Concentrate Tomato Paste) and paprika (2 1/2 tbsp sweet paprika). Cook for 1 minute or until beef is coated. Add stock (1/3 cup Massel beef stock). Bring to a simmer. Transfer to slow cooker. Add capsicum (2 red capsicums, cut into 2cm pieces) and tomatoes (400g can diced tomatoes). Season. Stir to combine. Cover. Cook on high for 4 hours (or low for 8 hours), adding mushroom (500g cup mushrooms, sliced) in the last 30 minutes of cooking time.
Serve goulash with sour cream (1/3 cup light sour cream), fettuccine (Fettuccine, cooked) and chopped fresh parsley (Fresh parsley, chopped, to serve).

For the leftovers, set aside to cool completely. Spoon into an airtight container. Refrigerate for up to 3 days or freeze for up to 3 months.
